So, it's #nationalcurryweek and I'm posting one of my favourite Gujarati curries ???? Akha Bharela Ringna nu Shaak which translates as whole stuffed aubergines (you can add potatoes to this curry too) ~ and the masala mix stuffed in these aubergines is typically Gujarati in that it has a real mix of spice, sweet and crunch, so there's jaggery (gor/gur) to sweeten the mix of spices and crushed peanuts to give it that delicious crunch. We also add a little chickpea flour to make it more wholesome. The aubergines are then cooked in a rich tomato gravy, a little more of the peanut spice mix and served with roti, daal, another curry and yoghurt. . My granny's signature curry! .
